I see a few options, but any ideas? I'm willing to go a bit out of the way to get to somewhere interesting.

How far are you willing to go out of the way?

For instance, the area around Nijmegen and Arnhem has a lot of history from WWII; that's the area of Market Garden and "A Bridge Too Far". Fairly close to Amsterdam.

Brussels looks like a 2-3 hour detour by car (probably less by train) and is actually an interesting city to visit; a couple of days is probably about right for a short visit (I'm usually there for business).

Similar detour would take you to Cologne; if you've never been, that might be my recommendation. Beautiful old city, cathedral, etc., and it's right on the Rhine so you can do a short river cruise through the castles that overlook the river.

First thoughts that come to mind.

A day, or half a day is enough for Bremen, Groningen, Zwolle, Amersfoort. I'd rather spend those days in Amsterdam, where you can easily walk around and visit all kinds of sites for days and days without getting bored one minute.

Groningen and Bremen are nice enough places to spend one day in each, but longer than that might get You bored.

Köln (Cologne) is about 4 hours from Amsterdam and another 4 fours from Hamburg by train.

If You don'y mind renting a car, driving along Rheintal, especially between Koblenz and Mainz is very nice. Beautiful scenery, castles, vineyards, and small villages to explore. Ditto for Moseltal.
